I have been really busy for the last couple of months with you know… something called life and work ☹ Since I haven’t posted anything in a while, I thought it would be a great idea to break the ice with a Christmas recipe!
Yep…you read well, a Christmas recipe. Now that Halloween is over, we can officially say we are almost getting to the most wonderful time of the year ♫
Ingredients for baking this goody:

For the cake:
- 2 Ripe Bananas
- 3 Eggs
- 1 Scoop of Protein
- 1 Cup of Whole Rolled Oats
- 1 Cup of Oat Flour
- 1/4 Cup of Chopped Walnuts, Chocolate Chips and raisins
- 2-3 Yummy Drops
- Bunch of Cinnamon powder
- 1 tbsp of Apply Cider Vinager
- 1 tsp of Baking Powder
For the Toppings:
- 1 Red Apple
- 2 tsp of Butter
- 1/2 Lemon
- 1/4 Cup Maple Syrup
- 1/4 Cup of Chopped Walnuts & Raisins
- Bunch of Cinnamon power & Mixed Spice power
- 1 Tbsp of Chia Seeds
- 1/4 Cup of chocolate chips
Directions:
As a rule of thumb when baking, pre-heat the oven to the desire temperature.
I pre-heated mine to 180 degrees C°
1.- Peel the bananas and smash them in a mixing bowl until you create a puree
2.- Add a scoop of protein, 1 whole egg and 2 white eggs, 1-2 yummy drops (I used cookies and cream flavor but you can simply add some vanilla extract). Mix well until combined everything
3.- Add a tbsp of apple cider vinegar and a tsp of baking powder. The apple cider vinegar will help to activate the baking soda which enhances the leaving or rising of any baked eats
4.- Incorporate a cup of whole rolled oats and a cup oat flour in conjunction with 1/4 cup of walnuts, raisins & chocolate chips (I picked white chips this time, but black or milk chips would also work
5.- Place in a baking tray and start preparing the toppings
6.- Chop an apple into small cubes and mix it with a juice made from 1/2 lemon, cinnamon, mixed spice powder, maple syrup and 1/4 cup of raisins & walnuts.
7.- In the meantime, melt some butter in a heated pan.
8.- Proceed to cook the prepared apples in the pan for about 5 minutes or until it starts to brown.
9.- Place the cooked apples on top of the cake and bake for about 15-20minutes
10.- Serve with a spoon of yogurt or eat it with a cup of coffee/tea
